A couple months ago, we received this Châteauneuf-du-Pape GSM blend in our Wine Folly wine club shipment showcasing 4 awesome blends. I could barely contain my joy! I “cellared” it (in our wine cupboard) until tonight. I just wanted to open something special. Oh, man… it was worth the wait! A blend of Grenache, Syrah, and Mourvèdre, the aroma of plum jam and baking spices popped immediately. The mouthfeel and taste began softly and finished with a sharp bite that actually softened when paired with our Baharat-spiced pearled couscous and veggies. It was then that the taste of milk chocolate and caramel took charge. Holy moly, this wine presented oodles of complexity that far-surpassed anything else that crossed our palates today — even my rockin’ awesome cooking!
